Lox vs. Nova vs. Smoked Salmon, Are They Different?
Yes, technically. In strict deli terminology:
- Lox is salmon cured in brine, salty, soft, not smoked. The old-school original.
- Nova (short for "Nova Scotia") is salmon that's lightly cured and then cold-smoked. Milder, slightly smoky, more delicate.
- Belly lox is the fattiest, saltiest cut, the truest old-school version.
In modern usage, "lox" often refers to any cured/smoked salmon on a bagel. Most people order what they actually want by saying "Nova lox" or just "lox." Don't sweat the terminology, order what tastes good to you.
